Cupping Notes: Sweet Lemon with a hint of Pepper and Chocolate
The morning and afternoon sun give the mountains of northern Honduras around Lake Yojoa a soft blue tone, and this high altitude region is the home of some of the most delicious coffee in the world!
The famers at Cero Azul, El Jaguar, and San Vicente have provided us with a world class coffees that are distinct in body and flavors.
We slowly roast our Honduras Blue Mountain Extra Light just until the first crack, which results in a bright tones and clear flavor notes. The natural sweetness of this coffee shines forth!
We call this "First Crack Coffee".
Photo: Education opens a new world to these children on the Coco River. Learning to read and write, as well as mathematics, social studies and the other subjects we teach provide them with a basis of becoming responsible adults living in a world that is often at odds with their cultural values.
Students like this one now have the abilities to become nurses, doctors, teachers, agronomists, pastors, computer technicians, and even governors of the region. Over the years our students have achieved all of these professions and more.
