Chiapas is the foremost coffee production region of Mexico. This Organic, High Altitude, Hand Picked Coffee is very delicious full bodies coffee with distinct chocolate and oragne notes with a natural sweetness. We love this coffee and roast it to when we hear the second crack fully developed.
These photos are from our time on a coffee farm working with the families who were working the harvest. Its a family affair, with children taking time off school to help with the family economy. We too pitched in, picking only the red ripe cherries. After the de-pulping and patio sun drying, we help sort out the imperfect beans, which the workers brewed as we worked.
